  • 4 skinless, boneless, chicken breasts (about 1½ pounds)
  • ½ cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 1 cup dried bread crumbs
  • 2 tbs olive oil
  • 1 (8-ounce) ball fresh buffalo mozzarella, water drained and sliced into 4 pieces
  • ½ cup freshly grated Parmesan Reggiano
  • 1 24 oz. jar of Terlato Kitchen Pomodoro Sauce
  • 1 lb spaghetti pasta
  • ½ tbs chopped Italian Parsley, for garnish
  • Salt and pepper

Process

  1. Preheat oven to 450°F. Pound chicken breasts to ⅓ inch thickness, season with salt and pepper.
  2. Dredge chicken in flour, then eggs, then breadcrumbs mixed with Parmesan.
  3. Sauté in olive oil until golden on both sides; set aside.
  4. Heat Terlato Kitchen Pomodoro Sauce, add chicken, top with mozzarella, and bake for 15–20 minutes.
  5. Cook pasta until al dente, drain.
  6. Serve pasta topped with sauce and chicken. Garnish with parsley and Parmesan.
